The fatty acids are the basic structural units of lipids. Lipid is the general term that refers to the dietary fat. The body can synthesize many fatty acids. However, those who can not be synthesized in adequate amounts must be obtained from the diet, and are called essential fatty acids (EFA / EFAs). The fatty acids may be saturated, monounsaturated or polyunsaturated depending on how the basic chain of carbon molecules is combined with hydrogen. The two essential fatty acids called linoleic acid (fatty acid Omega-3) and linoleic acid (fatty acid Omega-6).

Terms Omega-3 and omega-6 refer to what is the carbon atom of the fatty acid molecule that is located on the first double bond. Many scientists and nutritionists stress that the Western diet is rich in Omega-6 fatty acid, while consumption is low in Omega-3 fatty acid. In the diet including foods rich in Omega-3 and reducing the consumption of red meat, hydrogenated oils and other saturated fats may protect us from many of the degenerative diseases of today.

Essential fatty acids are found in abundance in fish oils and unadulterated seed oils such as rapeseed, sunflower and safflower oil. Flaxseed oil is an exceptional oil containing both essential fats in appreciable amounts. Flax also known as linseed, is the richest natural source of Omega-3 fatty acid. Oily fish cold salted water as herring, haddock, cod, mackerel, sardines and anchovies are also rich in Omega-3 polyunsaturated and are the source for fish oil supplements.

Has been recognized as essential fatty acids have many beneficial effects on the body and influence hormone production and immune and cardiovascular health. Deficiencies in several of these fatty acids have been associated with hormonal imbalance and degenerative diseases. Fatty acids maintain the structure and function of the cell membrane and subcellular membranes. Transport, degradation and elimination of cholesterol from the body is regulated by AGE. Besides prostaglandins, hormone-like substances in the body, are influenced by omega-3 and Omega-6 through a series of reactions dependent on enzymes.

The role of prostaglandins is to promote the contraction of smooth muscles, lowering blood pressure and regulate gastric secretions also have some influence on other hormones. Essential fatty acids are also important for normal growth, especially of blood vessels and nerves. They also maintain the skin and other tissues young and flexible due to its lubricating capacity. Among the most important fatty acids include the following: linoleic acid, linolenic acid, gamma linolenic acid (GLA), eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA).
