Vitamin C was discovered in 1932 and was the subject of the first controlled nutritional experiment documented history of medicine. Is known to be part of at least 300 biochemical processes in the body. This vitamin is water soluble and as human beings can not produce, we need a daily intake.

Our daily requirement of vitamin C is higher than any water-soluble vitamin. Because it is highly unstable and degrades easily in the process of storing, peeling, freezing and cooking, is not always possible to know the amount consumed in the diet.

Vitamin C, also known as ascorbic acid, is a water soluble vitamin. Unlike most mammals, humans can not synthesize their own vitamin C. Therefore, we must obtain vitamin C through our diet.

Function:

Vitamin C is needed for the synthesis of collagen, an important structural component of blood vessels, tendons, ligaments and bones. Vitamin C also plays an important role in the synthesis of the neurotransmitter norepinephrine. Neurotransmitters are essential for brain function and affect mood. In addition, vitamin C is necessary for the synthesis of carnitine, a small molecule that is essential for the transport of fat to cellular organelles called mitochondria, where it is converted into energy.

Recent research also suggests that Vitamin C is involved in the conversion of cholesterol to bile acids, which could have implications for blood cholesterol levels and incidence of gallstones.

Vitamin C is also a highly effective antioxidant. Even in small amounts vitamin C can protect body indispenasables molecules such as proteins, lipids (fats), carbohydrates and nucleic acids (DNA and RNA) from damage by free radicals and reactive oxygen species generated during normal metabolism and also exposed to toxins and pollutants (eg smoking). Vitamin C may also be able to regenerate other antioxidants like Vitamin E.
